These banana crumpets with cream cheese are dressed in pistachios, seeds and lashings of brown rice syrup. They are quick and easy to make and you could eat them for breakfast, lunch or even as a snack! It makes a great change from avocado on toast! Crumpets for breakfast makes a lot of sense. They are filling and with healthier toppings they will keep you satisfied for hours!
The sweet ripe bananas slices doesn’t need honey, rather use a brown rice syrup which is just sweet enough. Green pistachios and seeds add a wonderful crunch against all that delicious softness. I’ve added a few extra seeds for a nutritional breakfast and a lovely contrast to all that cream cheese softness.
Once you’ve made these once, you’ll be making them all the time!

How to make banana crumpets with cream cheese, pistachios and rice syrup
You will need
- 3 crumpets, toasted
- 100g cream cheese (I used the lighter version)
- 1 ripe banana, sliced
- 25g pistachios, chopped
- 15g pumpkin seeds
- 1 tsp toasted sesame seeds
- 3 tsp Biona Organic brown rice syrup
Simply toast the crumpets. Allow them to cool a little. Add a good slather of cream cheese and place the sliced bananas on top. Sprinkle over the nuts and seeds.
Finish with a good drizzle of Biona Organic brown rice syrup.
