This started life as an Ottolenghi recipe, but over the years this quinoa salad with pomegranate and pistachios has been adapted time and time again. I’ve now settled with this quick and healthy version. It’s a perfect side salad to have up your sleeve for bbq’s and family get-togethers. It also makes a brilliantly healthy vegetarian lunch. I love having a collection of delicious healthy eating recipes, it means I can be satisfied and smug at the same time! Besides I can indulge elsewhere if I choose to.
This quick quinoa salad is very healthy and goes great with fish, lamb and chicken especially, but I often eat it straight from a bowl.
To make my favourite quinoa salad you will need
- 70g shelled pistachio nuts
- 1 red onion
- 70g rocket
- 225g ready to eat quinoa
- 100g spring or continental salad onions
- 100g pomegranate seeds
- zest and juice of 2 limes
- juice of 1/2 lemon
- 1 crushed garlic clove
- olive oil
- salt and pepper
Let’s get started, this is a nice quick recipe. Start my chopping your onion thinly.
Then gently toast the pistachios and cook the onions in a little olive oil. You want the pistachios to have a little colour and the onions to be soft and caramelised, but not overly coloured.
Put the onions and pistachios aside to cool. Now let’s start the zesty dressing. Juice and zest the 2 limes.
Add to that the juice of 1/2 a lemon.
Time to add the olive oil. Now, I’ve never quite understood why you need to add quite so much oil to a dressing. Sure it’s not bad for you, but a little will do you enough good, I feel, without greasing up the salad! There I’ve said it!
This is how much I use, but fill your boots, it’s entirely up to you, of course.
Now add the crushed garlic and salt and pepper (to your taste).
Give it a good mix with a fork. B e a utiful.
Now all you have to do is assemble it all. Get a good sized bowl and add the rocket and quinoa together.
Now slice up and throw in those lively salad onions.
Now pour over your amazing dressing.
Give it a good old mix.
Now all that’s left to do is add the decorative ingredients. The jewel like pomegranate…
Those sweet juicy onion slices and finally the bright green crunchy pistachios.
Now, just mix up the salad gently a bit. You don’t want the best stuff to hide at the bottom.
And enjoy – it’s health in a bowl!
