This hangover breakfast is ideal for when you fancy something a bit special but need sustenance with as little fuss (and washing up) as possible.
The fantastic Bloody Mary sauce contains your ‘hair of the dog’.
You’ve got to try it, it’s delicious!
2 chipolata sausages
2 rashers of streaky bacon
1 chargrilled pepper
3 spring onions
tsp thyme leaves
4 dashes worchestershire sauce
2 free-range eggs
salt & pepper
2 dashes tabasco pepper sauce
Get a little oil in your pan and brown the sausages on a medium heat.
Meanwhile chop up your chargrilled pepper, slice the spring onions and cut the bacon into bite size squares.
After the sausages are fully browned add the bacon.
Once browned turn the bacon pieces over to brown the other side.
Once done, push these aside and thrown in your pepper and spring onion.
Now pour in the passatta
Time for the ‘hair off the dog’.
I poured in about half of this taster bottle. But I’ll leave this to your discretion.
Now add the thyme leaves, a little salt and pepper,
and 4 dashes of Worcestershire sauce.
Cook on a medium heat for 10 minutes to let the sauce thicken up. Time to make a coffee.
Now make two hollows and break in your eggs.
This breakfast comes with a smile.
Let the eggs poach in the sauce for about 15 minutes, while you check your social media (and delete or share as appropriate).
If needs be, place the pan under the grill for a few seconds to cook through the surface of the egg white.
Add the dashes of Tobasco sauce over your eggs, tear off some hot toast and get scooping.
