This would make a great paprika chicken sandwich with avocado, but I had a fresh roll selection. This filling could also have been called Mexican style chicken with guacamole salad, as I used the ingredients I love in a homemade guacamole and spices I use in a chicken fajita. What elevates this paprika chicken sandwich (or roll) is the smoked chilli mayo. It is delicious without, but fantastic with! So it became a ‘paprika chicken and avocado salad roll with smoked chilli mayo’. Quite a mouthful. But then so is this recipe..!

But this lunch is packed full of healthy salad ingredients and lean chicken. So, you are allowed to indulge a little on some high quality mayonnaise…
Our family favourite at the moment is this Gran Luchito smoked chilli mayo. We’ve been having it on our burgers and have gone through several jars already!

How to make a paprika chicken and avocado salad roll (with smoked chilli mayo)
You will need (for 2 rolls):
- 1 chicken breast
- 1/2 tsp smoked paprika
- 1 tbsp olive oil
- 1 clove garlic, crushed
- 1/4 tsp salt
- pinch of cayenne pepper
- 2 bread rolls
- 1 avocado
- 1 small red onion, thinly sliced
- a small handful of cherry tomatoes, sliced
- 1 red chilli, thinly sliced
- a few lettuce leaves
- 1/2 avocado
- 1/2 lime
- 6 tsp Gran Luchito smoked chilli mayo
Mix together the paprika, oil, salt, garlic and cayenne pepper and rub the marinade over the two chicken breasts. Leave to marinade for 20 minutes.
Place a little oil in a frying pan and cook the chicken breasts for 6 minutes either side on a medium heat. Once cooked, leave the chicken to rest in some foil.
Prepare the salad ingredients by slicing the onion, tomatoes, red chilli and avocado. Squeeze the lime over the avocado to stop it browning. Slice the chicken.
Cut the rolls open and fill them by layering all the fillings.
Finally dunk and dollop with 3 tsp of smoked chilli mayo. It elevates it to another level!
There you have it. A paprika chicken and avocado salad roll all dressed in some delicious smoked chilli mayo.
