Homemade cocktails are one of life pleasures. Ones with herbary and sugar round the rim, classic ones in Martini glasses, ones that sparkle with bursting Champagne bubbles, but mainly, for me, quick and easy fruity cocktails like this Raspberry and Blackberry Frozen Yogurt Daiquiri.
This summer berry cocktail one is delicious, creamy and semi frozen. It’s perfect for refreshing supping slowly in a warm garden.
Daiquiris are a favourite no matter what fruit they contain. But this time of year my fridge is busting with berries of all types. So, just for today I’ve ditched the pretty strawberry and have opted for a dashing raspberry and blackberry combo.
It results is a beautiful cocktail with the most incredible colour. So, although, if you are a traditionalist, you could switch the fresh, freeze dried and frozen yogurt to strawberry, I urge you to give this a go. It’s incredible!!
This summer cocktail is just perfect for relaxing and cooling down with!
How to make a Raspberry and Blackberry Frozen Yogurt Daiquiri
- 100g raspberries
- 100g blackberries
- 2 tbsp freeze dried raspberries
- 2 tbsp golden caster sugar
- 4 tbsp white rum
- 4 scoops of berry frozen yogurt
- 1 cup of crushed ice
All you need is a blender!
First of all place the fresh berries along with the freeze dried raspberries into the blender.
Simply add in the golden sugar,
then the white rum and frozen berry yogurt.
Fill one of your serving tumblers with crushed ice and throw that in too.
Give it all a whizz (it won’t take long) and serve immediately, decorated with a little more freeze dried raspberries sprinkled on top.
You could make like a bartender and add a fresh berry to the rim of the glass for that finishing touch.
Happy Daiquiri days x
