Raspberry Sorbet Prosecco Float

This Raspberry Sorbet Prosecco Float makes a perfect celebration cocktail. It’s embarrassingly easy but utterly delicious and looks super special and fun. Make this rather girly cocktail when bridesmaids get together, when your daughter turns 18 or 21, when you celebrate an engagement, or Valentine’s. It’s such a celebratory drink with the bubbles exploding round the floating raspberry sorbet, a little like a raspberry Bellini with an exciting twist!

I’d make this cocktail recipe with a dry Prosecco because the sorbet is so sweet. You could also use Champagne of course! Use the best quality raspberry sorbet you can find, made with real raspberries. Serve in any wide, stem glass for a classy look.

My daughter is getting married next year and so my mind is on all things celebratory! I came up with this cocktail as an idea for when Charlotte has her bridesmaids together trying on dresses and planning the hen do. It’ll also be fabulous as a cocktail for the night before the wedding, when all the ‘maids’ (and me) are housed in a pretty country escape with the bride-to-be.

Erm, well if you haven’t guessed already you half fill a wide glass with Prosecco and carefully lower in a scoop of quality raspberry sorbet. Ta Da!
