Halloumi and Watermelon salad

I had a fantastic Halloumi and Watermelon salad in Sydney on a recent trip. I jotted down what I tasted and changed a few things as I munched up. It’s a quick and easy recipe and healthy lunch idea.

There are salty ingredients (like the halloumi and olives) that are balanced by sweet ingredients (such as the juicy watermelon and cherry tomatoes). The balsamic dressing gives a sweet and sour taste and baby spinach leaves gives the bitter.

I’ve added roasted nuts and seeds for a healthy crunch.

All in all a very balanced dish that’ll do you as good as it tastes.

Instructions
  1. Prepare all the ingredients.
  2. Add the spinach, green olives, cherry tomatoes and watermelon into a large salad bowl and toss together.
  3. Add the slices of halloumi to a non stick pan on a medium heat to char slightly. Do both sides (keep an eye this won't take long).
  4. Meanwhile add the balsamic dressing, nuts and seeds and toss again.
  5. Serve into 2 bowls. Then add on your warm, charred halloumi cheese. Enjoy.
