I had a fantastic Halloumi and Watermelon salad in Sydney on a recent trip. I jotted down what I tasted and changed a few things as I munched up. It’s a quick and easy recipe and healthy lunch idea.
There are salty ingredients (like the halloumi and olives) that are balanced by sweet ingredients (such as the juicy watermelon and cherry tomatoes). The balsamic dressing gives a sweet and sour taste and baby spinach leaves gives the bitter.
I’ve added roasted nuts and seeds for a healthy crunch.
All in all a very balanced dish that’ll do you as good as it tastes.

You want to serve it with the halloumi warm, so prepare the rest first, popping slices of the salty cheese into a pan for a few minutes and there you have it. An easy but impressive lunch (and super healthy too!).
