Mango and Macadamia Bircher

This healthier brunch recipe is a mango and macadamia bircher with nutritious seeds and a little maple syrup. There was always an amazing overnight bircher muesli on the breakfast menus in Sydney and New Zealand. It gave a delicious and healthy start and was satisfying for hours. It got me wondering, ‘What is a bircher muesli?’. So, now I’m back home I made it my mission to learn about this nutritious breakfast bowl recipe. I came up with a simple oatmeal recipe that was quick and easy to prepare and utterly scrumptious.

Ingredients

Instructions
  1. Add the natural yogurt, milk and porridge oats into a bowl. Stir them together, cover and place in fridge for at least 4 hours or overnight.
  2. Toast the seeds gently in a dry pan. Tip onto a small plate. Then toast the macadamia nuts in the same way. Tip these onto a separate small plate (roughly chopped)
  3. When you are ready to eat, prepare your mango (this can be done the night before of course)
  4. If the oat mixture is too stiff (varies with the size of the oats) just add a little more milk to loosen them.
  5. Add in the seeds and some of the mango pieces. Add the rest of the mango pieces on top along with the macadamia nuts.
  6. Drizzle a little more maple syrup on the top to your mango and macadamia bircher, to your taste.
