Summer fruit sticks

This is a fun and delicious way to eat more fruit. The fruit sticks I have prepared are raspberry crumble, apple s’mores and banana brittle.

Although, you could use up any fruits from the fridge using these ideas, such as, blackberry crumble, mango s’mores etc.

On a summers day serve on a platter straight from the fridge with more pieces of delicious fresh fruit to pick on.

  1. Prepare the ingredients before you melt your chocolate. First, crush the additions and have them ready in neat piles. Cut your banana, and slice the apples.
  2. Squeeze lemon over the apples to stop them browning.
  3. Prepare your bain-marie (a saucepan of water with a bowl over the top for the chocolate) and bring the water to a simmer.
  4. Place the fruit on the sticks ready. 3 raspberries per stick, 1/2 banana per stick and 3 apple slices per stick.
  5. Melt the milk chocolate gently. I turn the heat off the water completely and let it melt slowly. As soon as some has melted use a teaspoon to attach the raspberries and the apples to the stick. Place them upside down in a bowl to harden.
  6. Once all the chocolate has melted use a teaspoon to wave chocolate all over the raspberries. Then quickly add sprinkles of the crushed butter galettes. Ideally place the fruit sticks in a cake pop holder. Next coat the apples with the remaining milk chocolate, allowing some of the apple to show through. Add on the marshmallows and graham pieces pressing in lightly.
  7. Next gently melt the dark chocolate. Using a spoon cover most of the banana with the melted chocolate and sprinkle over the crushed peanut brittle. Place in the cake pop holder along with the other fruit sticks.
  8. Place in the fridge to set if it's a warm day.
  9. Enjoy your 5 a day in the shade of a beautiful garden with your favourite people.
Recipe Notes

If the temperatures are high, place the fruit sticks into the fridge to set.

If you do not own a cake pop holder, place them on their side onto a piece of parchment paper.
