This Roasted Sweet Potato With Brie recipe makes delicious healthy side, supper or lunch dish. It’s especially good as an Autumn or Winter dish. This is a healthier choice and it will fill you up for hours. Walnut and brie dishes always get my vote, so this is one of my favourites. The rosemary works so well with it. It may look challenging but this is a step by step recipe so it’s really rather easy to make.

How to make Roasted sweet potato with brie, walnuts with a citrus dressing
Ingredients (enough for 2)
- 2 sweet potatoes
- 1/4 large red onion
- 2 tsp fresh rosemary
- 1/4 tsp dried chilli flakes
- 40g walnuts
- salt and pepper
- 100g brie
- 4tbsp olive oil
- 2tbsp brown rice syrup (or maple syrup)
- 1tbsp cider vinegar
- juice of 1/2 lemon
- juice of 1/2 orange
- 1/2 tsp ground cinnamon
Chop the sweet potatoes into 2cm cubes. toss in some oil, salt and a little ground pepper and place in a preheated oven set at 190ºC for 30-35 minutes (turning them after 15 minutes)..
Toast your broken walnuts in a non stick frying pan, giving the pan a shake every now and then so the walnuts are evenly toasted.
Chop up the rosemary, red onion and dried chilli. Leave aside with your walnuts.
How to make a citrus dressing
Start with 4tbsp olive oil, then add in 2tbsp brown rice syrup.
Next add in 1tbsp cider vinegar.
Squeeze in the juice of 1/2 lemon.
and 1/2 an orange.
Finally, add a tsp of ground cinnamon.
Mix it up thoroughly with a fork.
Have your grill on, you’ll need it once the potatoes are roasted.
Once the sweet potatoes are ready, tip them into a bowl and add the onion, chilli and 1tsp (1/2) of the rosemary.
Pour in your golden citrus dressing.
Toss the potatoes in the dressing thoroughly.
Place the sweet potato mix into two bowls.
Place slices of brie over the potatoes,
and place the bowls under your heated grill for a few seconds to melt the brie.
Then sprinkle over the toasted walnuts and the remaining rosemary.
Now sit somewhere quiet and enjoy your satisfying healthy meal!
