If you only want one banana cake recipe, this is your one! Especially if you get buzzed about honey. Spelt honey and banana cake with honey icing and buzzy bees!
Spelt flour is naturally low in gluten (so no messing with Xanthan Gum) and I really enjoy it’s flavour.
Good banana days are announced in our house. It’s usually 3 days where they are perfectly ripe for eating straight out the skin, after that they are slightly overripe but perfect for smoothies or a delicious flavoursome banana cake.
And finally, honey is packed full of health benefits, besides I recently bought a gorgeous little honey pot which is in danger of outshining the cake!
Push the Buzzy Bees back and cut a few slices to reveal the moist crumb – oh and that aroma!!
To make this incredible Spelt Honey and Banana cake with Honey icing and Buzzy Bees you will need:
For my cake
- 188g unsalted butter
- 267g soft brown sugar
- 3 medium free-range eggs
- 1 tsp vanilla extract
- 225g spelt flour
- 3 tsp baking powder
- 150g natural yogurt
- 3 ripe bananas
- 15g honey
For the icing (Mary Berry’s)
- 150g icing sugar
- 12 tsp honey
- enough cold water to make the icing a little runny only
For the Marzipan Bees
- Marzipan (enough to make 5 bees)
- a few squares of chocolate
- flaked almonds (4 on each bee, so at least 20)
Get everything out the fridge and bring to room temperature..Place a paper liner in a loaf tin and switch on your oven to 190ºC.
Sieve the spelt flour and baking powder together. Mash up the bananas and stir through the honey.
First beat the butter and soft brown sugar on high until they are pale and soft.
Add the vanilla extract into the eggs and use a fork to lightly whip together.
Now add in bit by bit whilst beating on medium until fully incorporated.
Now add 1/2 of the sieved flour – beat on low, then 1/2 the yogurt – beat in, then the rest of the flour followed by the rest of the yogurt.
Now lightly mix in the banana and honey mix.
Tip into the tin and use a spatula to flatten the surface.
Place in the oven for 1 hour 15 minutes. Keep an eye on the surface -if it looks like it may burn, put some foil over the top.
Whilst the cake cooks and fills your house with amazing aroma, let’s start the buzzy bees.
How to make marzipan bees
Warm up the marzipan by working it in your hands (this will stop it cracking).
Now roll out 5 bee bodies.
Use a toothpick to make little eyes.
Use a knife to cut slits for the almond flake wings. Place 2 in each slot.
Melt a few squares of chocolate and fetch a small new paintbrush.
Now paint on the chocolate bee strips. Don’t fret if it’s not perfectly neat. Think of them having different characters!
If the cake is cool and with the buzzy bees are ready, it’s time to make the incredible honey icing.
Sieve the icing sugar and add in the runny honey,
And a tiny bit of cold water at a time until you get a slightly runny consistency.
Add the icing all over the top allowing it to run down the sides.
Rest the Buzzy Bees on top.
It makes one very jolly spelt honey and banana cake!
