How do you make Eton Mess in a new and exciting way? We are huge fans of summer berry dessert recipes and also adore passion fruit cream so the summer berry Eton mess with passion fruit cream was born! It is unbelievably satisfying with summer berries bursting with juice, lots of crunchy and chewy meringue layered with a soft and lively passion fruit cream.
For this summer dessert recipe I’ve used berries galore: strawberry, blackberry, raspberry and blueberry. This passion fruit cream makes a great topping for ice-cream too. This is an easy Eton mess dessert recipe with a handful of ingredients, but it looks sensational.
So if you are looking for an Eton mess dessert with a twist, this is the recipe for you!
How to make Summer berry Eton mess
- 2 large top quality shop bought Meringues (or make your own)
- 250g double cream
- A handful each of blueberries, strawberries, raspberries and blackberries
- 3 large for 4 small passion fruits
- 1/2 lemon
- 150g double cream
- 2 tbsp caster sugar
- 1 egg yolk
Chop your fruit (juicy mess is the name of the game) and place in a bowl.
Raspberries are usually soft so don’t worry about those.
Break up your meringue and place in the bowl with the berries.
Whisk your 250g of double cream. You want it to form peaks – if you go too far it will resemble cottage cheese!
Add the berries and meringue and mix together with the cream – your Berry Eton Mess is done!
Now for that passion fruit cream…
Using a hand whisk beat the egg yolk and the sugar until it doubles in size.
Then add in two of the passion fruits and the juice of 1/2 a lemon and stir them in.
Whisk the 150g of double cream to peaks again, then add in your passion fruit mix.
Now its all about layering these beautifully messy desserts.
Your summer berry Eton Mess should be packed with bursting berries and sweet meringue pieces. The soft passion fruit cream adding a touch of luxuriant smoothness.
Squeeze the seeds of the remaining passion fruit over the top of your desserts.
There you have it. This recipe makes four generously sized summer individual desserts.
