My daughter is an Eton Mess fan and they are, I quite admit, perfect as they are.
But, if you do want to mix it up a little, using summer berries bursting with juice and layering the ‘mess’ with a smooth passion fruit cream is a jolly good way to do it!
Berry Eton Mess is berry berry nice!
For my Summer berry Eton mess you will need:
2 large top quality shop bought Meringues (or make your own)
250g double cream
A handful each of blueberries, strawberries, raspberries and blackberries
For the passion fruit cream you will need:
3 large for 4 small passion fruits
150g double cream
2 tbsp caster sugar
1 egg yolk
Chop your fruit (juicy mess is the name of the game) and place in a bowl.
Raspberries are usually soft so don’t worry about those.
Break up your meringue and place in the bowl with the berries.
Whisk your 250g of double cream. You want it to form peaks – if you go too far it will resemble cottage cheese!
Add to your berries and meringue and mix together – your Berry Eton Mess is done.
Now for that passion fruit cream…
Using a hand whisk beat the egg yolk and the sugar until it doubles in size.
Then add in two of the passion fruits and the juice of 1/2 a lemon and stir them in.
Whisk the 150g of double cream to peaks again, then add in your passion fruit mix.
Ta da! Smooth and lush passion fruit cream.
Now its all about layering these beauties up.
Your summer berry Eton Mess should be packed with bursting berries and sweet meringue pieces. The soft passion fruit cream adding a touch of smoothness.
Squeeze the seeds of the remaining passion fruit over the top of your desserts.
There you have it. This recipe makes four generous or 6 more modest sized desserts.
