My ultimate tangy egg sandwich filling recipe. This recipe is versatile, just add potatoes for a potato salad or use it to fill up your Vol Au Vents!
Do people still eat Vol Au Vents? Anyway, it’s time to hatch a new egg sandwich.
Let’s crack on.
For my tangy egg sandwich filling you will need:
3 medium eggs
2 tbsp natural yogurt
2 spring onions
1 tbsp chives
1 rounded tsp wholegrain mustard
1/2 rounded tsp sweet paprika
a grind or two of salt
Hard boil the eggs (7 minutes in bubbling water).
Once the eggs have cooled in cold water, peel them and add all the ingredients together.
Do a mash up!
Add a few boiled new potatoes for a potato salad, top a jacket potato with the mix, or make up a couple of delicious sandwiches.
This time I had mine with cress and crispy smoked streaky bacon.
Sweet crispy lettuce leaves go really well, such as cos.
