This is my healthy tangy egg sandwich filling recipe. You could use this filling in interesting ways. Some ideas are to add potatoes for a tangy egg potato salad, or use it to fill up Vol Au Vents for an exciting canapé. It’s a really easy and versatile filling recipe! I love eating it with bacon in a sandwich of seeded bread. Think of it as a gourmet egg sandwich (that’s pretty cheap, really). So, it makes a great picnic recipe, however you decide to use it.
Let’s crack on. boom boom.
How to make my tangy egg sandwich filling
- 3 medium eggs
- 2 tbsp natural yogurt
- 2 spring onions
- 1 tbsp chives
- 1 rounded tsp wholegrain mustard
- 1/2 rounded tsp sweet paprika
- a grind or two of salt
First of all, you need to hard boil the eggs (7 minutes in bubbling water).
Once the eggs have cooled in cold water, peel them and add all the ingredients together. Simple!
Then mash it all up!
You could add a few boiled new potatoes for a potato salad or top a jacket potato with the mix. Or, like me, make up a couple of delicious sandwiches.
This time I had mine with cress and crispy smoked streaky bacon.
Sweet crispy lettuce leaves go really well with the tangy eggs.
