Healthy avocado recipes are hugely popular and for good reason. They are packed with nutritional value and a satisfying too! This tuna salsa salad with avocado jackets make a fun and healthy lunch. They are super easy to make, so you can make this quick and healthy lunch anytime. It’s very fulfilling and should keep you going for hours.
If you are making this lunch for children, just drop the red chilli. It’s like having a super healthy jacket potato! The tuna filling is full of fresh salsa ingredients.
For my Tuna salsa salad with avocado jackets you will need:
- 2 avocados
- 1/2 small red onion
- 1 large red chilli (no seeds if you like it fresh but not spicy)
- 2 handfuls of cherry tomatoes
- 2 tins of tuna
- 1 lime
- 1 handful of fresh coriander
- salt and pepper
- Good quality olive oil
- 2 handfuls salad leaves
Chop the onion as finely as you can,
and chop up the red chilli.
Tip the tuna (drained) into a bowl and add the red onion and the red chilli.
Slice the tomatoes in half and squeeze out most of the seeds. Then slice them up.
Add these into your bowl.
Cut up your coriander with some scissors over your bowl and stir it all up.
You now have a bowl of rainbow colours!
Add a good drizzle of good quality oil and a grind of salt and pepper.
Now squeeze in the juice of 1/2 a lime.
Get together 2 bowls and place the salad leaves around the edges.
Cut the avocados in half and remove the seed.
Score the flesh in a criss cross pattern and squeeze over the juice of the other half of lime.
Add a grind of salt to each half.
Place into the serving bowls.
Fill the holes in the avocado with your delicious tuna salsa mix and add a little more on top of each avocado half.
Now simply sit back and enjoy, knowing that you are eating beautiful, healthy food that you’ve freshly made yourself.
