For my Tuna salsa salad with avocado jackets you will need:

  • 2 avocados
  • 1/2 small red onion
  • 1 large red chilli (no seeds if you like it fresh but not spicy)
  • 2 handfuls of cherry tomatoes
  • 2 tins of tuna
  • 1 lime
  • 1 handful of fresh coriander
  • salt and pepper
  • Good quality olive oil
  • 2 handfuls salad leaves

Method:

Chop the onion as finely as you can,

Tip the tuna (drained) into a bowl and add the red onion and the red chilli.

Slice the tomatoes in half and squeeze out most of the seeds. Then slice them up.

Cut the avocados in half and remove the seed.
