It’s the time of year when we need to nourish ourselves and most of us are really up for it.
New Year has us craving a healthy salad despite frost biting at our toes.
Well, here’s one pretending to be a jacket potato and it’s completely fulfilling!
Tuna salsa salad with avocado jackets
For my Tuna salsa salad with avocado jackets you will need:
1/2 small red onion
1 large red chilli (no seeds if you like it fresh but not spicy)
2 handfuls of cherry tomatoes
2 tins of tuna
1 handful of fresh coriander
salt and pepper
Good quality olive oil
2 handfuls salad leaves
Chop the onion as finely as you can,
and chop up the red chilli.
Tip the tuna (drained) into a bowl and add the red onion and the red chilli.
Slice the tomatoes in half and squeeze out most of the seeds. Then slice the sweet babies up.
Add these into your bowl.
Cut up your coriander with some scissors over your bowl and stir it all up.
You now have a bowl of rainbow colours!
Add a good drizzle of good quality oil and add a grind of salt and pepper.
Now squeeze in the juice of 1/2 of the lime.
Get together 2 bowls and place the salad leaves around the edges.
Cut the avocados in half and remove the seed.
Score the flesh in a criss cross pattern and squeeze over the juice of the other half of lime.
Add a grind of salt to each half.
Place into the serving bowls.
Fill the holes in the avocado with your delicious tuna salsa mix and add a little more on top of each avocado half.
Now simply sit back and enjoy, knowing that you are eating beautiful, healthy food that you’ve freshly made yourself. It’s the perfect January fix after the naughtiness of Christmas.
